RECIPE: Lemon Ricotta Pancakes with Blueberry Compote
Recipe yields 8 to 12 pancakes.
INGREDIENTS:
- 1¾cup all-purpose flour
- 1½teaspoons baking powder
- ½ teaspoon fine salt
- ¼cup granulated sugar
- ½ cup ricotta cheese
- 1½teaspoons pure vanilla extract
- 3 large eggs
- ½ cup buttermilk
- 2 tablespoons unsalted butter, melted, plus room-temperature butter for cooking and serving
Blueberry Compote:
- 1 cup sugar
- 2 cups of water + 4 TB of water
- 2 cups of blueberries
- 2 tablespoon Cornstarch
- Zest and juice of 1 lemon
METHOD:
Mix all your dry ingredients together with a whisk so they are well incorporated. Melt the butter, mix in the vanilla, ricotta, eggs and buttermilk and whisk the wet ingredients together. Add in your dry components and mix, do not over mix, you may have some clumps, that’s ok!
For the compote, Put water into medium sized sauce pan on high heat, add sugar and mix until the sugar has dissolved into the water. Add in the blueberries, the zest and juice of the lemon. When the mixture begins to biol, turn down the heat and let simmer for 15/20 minutes. Once the blueberries are beginning to break, take the cornstarch mixed with 4 TB of water and begin to incorporate into the compote. Depending on preference you may need to add more cornstarch to achieve desired thickness. Always remember to mix any cornstarch with water to avoid clumping. Once desired consistency is reached, remove from heat.
We suggest letting the batter rest for 15 minutes before cooking, this will give the baking powder some time to activate and will give you fluffy pancake. Cook your pancakes on medium/high skillet, top with blueberry compote and enjoy!
