RECIPE: Cinnamon Roll Casserole

Recipe yields 16 to 18 pcs.

INGREDIENTS:

  • 1 loaf of white bread (I like to use brioche, I find it gives the dish more body and a smoother texture.)
  • 2 ½ cups of milk
  • 8 large eggs
  • 1 ½ teaspoons of vanilla extract
  • 3 tablespoons of sugar

Topping:

  • ¼ cup of sugar
  • ¼ cup of brown sugar
  • 1 ½ tablespoons of cinnamon
  • 6 tablespoons of butter

Icing:

  • 2 ounces of cream cheese
  • 3 tablespoons of butter, softened
  • 1 teaspoon of vanilla extract
  • 4-6 tablespoons of milk as needed
  • 4-5 cups of powdered sugar

METHOD:

Cut bread into 1 inch cubes and place ½ of the bread into a lightly greased 9×13 glass baking dish. In a small bowl, mix the toppings ingredients (except for the butter) well, then divide in half. Sprinkle ½ of this mixture on top of the bread cubes. Layer the remaining half of the bread on top. Next, whisk the milk, eggs, vanilla and 3 TB of sugar together and pour over the bread cubes. Wrap the pan with film wrap and place in the refrigerator overnight. The next morning, preheat your over to 350. Melt the 6 TB of butter and pour evenly over the cubed bread, then sprinkle the remaining sugar topping on to the casserole. Place into the oven for 35-45 minutes until casserole is golden brown on top. While it is baking cream together the cream cheese and butter until light and fluffy. Mix in vanilla and milk, then gradually mix in the powdered sugar until fully incorporated. Add in 1-2 TB of milk to make the icing just pourable. Once the casserole is fully baked, pull out of the oven and let it rest for 15-20 minutes prior to pouring the icing on top and serving. I like to put the icing into a squirt bottle so I can pour the icing on evenly.

“This lovely bed and breakfast is warm and inviting. Owners Ron and Katy are wonderful hosts. They provide a delicious breakfast and have excellent recommendations for area activities. We found the accommodations to be clean and quiet even with a full house on one of the nights. I encourage you to add them to your travel spots when visiting the finger lakes.” – Jonathan E.
